Champagne changes the room.
Champagne has always fascinated me.
Not because of the labels.
Or the prestige.
Or even the remarkable craftsmanship behind every bottle.
What has always fascinated me is what happens after the cork is released.
People slow down.
The conversation changes.
Laughter comes more easily.
Strangers become familiar.
For a little while, the outside world disappears.
I wanted to create a place where that feeling was not reserved for birthdays, weddings or rare celebrations.
That is why I created The 7:00 Salon.


A private world, one evening each month
The 7:00 Salon is not a public event.
It is a monthly Champagne Salon for a small circle of women.
Each Salon takes place within the elegant surroundings of a carefully chosen five-star Sydney hotel.
A beautiful space.
Soft light.
Exceptional Champagne.
Familiar faces.
And an evening that asks nothing of you except that you arrive.
You may come straight from work.
You may arrive tired.
You may not know anyone in the room yet.
That does not matter.
From the moment you enter, the evening has already been prepared for you.
Settle in.
Exhale.
Let someone else look after the details.

What happens at The 7:00 Salon?
Each month, twelve women gather at 7:00 pm.
On arrival, you’ll be welcomed with a Champagne cocktail and canapés.
Champagne is then served during the evening, beautifully hosted, unhurried, and never formal.
There are stories behind the bottle, but no technical tasting class. Conversation is encouraged, not managed. Nothing is rushed.
The atmosphere is elegant, but never formal.
The Salon lasts around 1.5 to 2.5 hours. Afterwards, if you’d like to linger, the evening can continue at your own pace.
Some women will arrive for the Champagne. Others will come because they are looking for something more difficult to describe.
A place that feels beautiful. A space that feels easy. An evening they can look forward to returning to.
Some places become familiar.
Because the best rooms are not always the largest.
And the most memorable evenings rarely happen in a crowd.
The 7:00 Salon is limited t twelve women each month.
Some will come once.
Others may return.
Faces may become familiar.
Conversations may continue.
And over time, what began as an evening out may begin to feel like somewhere you know.

The First Season
The first Salon evenings will be released individually.
Each evening takes place in a carefully chosen five-star Sydney hotel, beginning with a Champagne cocktail and canapés on arrival, with Champagne served during the evening.
Women who register their interest will hear first when dates and booking details are released.
Twelve places will be available for each Salon.
