Champagne is then served during the evening, beautifully hosted, unhurried, and never formal.
The Salon lasts around 1.5 to 2.5 hours.
Some women head home feeling restored. Others choose to linger a little longer, letting the night unfold at their own pace.
Champagne changes the room.
Champagne has always fascinated me.
Not because of the labels.
Or the prestige.
Or even the remarkable craftsmanship behind every bottle.
What has always fascinated me is what happens after the cork is released.
People slow down.
The conversation changes.
Laughter comes more easily.
Strangers become familiar.
For a little while, the outside world disappears.
I wanted to create a place where that feeling was not reserved for birthdays, weddings or rare celebrations.
That is why I created The 7:00 Salon.
A private world, one evening each month
The 7:00 Salon is not a public event.
It is a monthly Champagne Salon for a small circle of women.
Each Salon takes place within the elegant surroundings of a carefully chosen five-star Sydney hotel.
A beautiful space.
Soft light.
Exceptional Champagne.
Familiar faces.
And an evening that asks nothing of you except that you arrive.
You may come straight from work.
You may arrive tired.
You may not know anyone in the room yet.
That does not matter.
From the moment you enter, the evening has already been prepared for you.
Settle in.
Exhale.
Let someone else look after the details.
What happens at The 7:00 Salon?
Each month, twelve women gather at 7:00 pm.
Three exceptional Champagnes are poured across the evening.
Artisan cheese sablés, fine chocolates and seasonal accompaniments are served.
There are stories behind the bottles, but no technical tasting class.
Conversation is encouraged, not managed.
Nothing is rushed.
The atmosphere is elegant, but never formal.
Some women will arrive for the Champagne.
Others will come because they are looking for something more difficult to describe.
A place that feels beautiful.
A space that feels easy.
An evening they can look forward to returning to.
Some places become familiar.
Because the best rooms are not always the largest.
And the most memorable evenings rarely happen in a crowd.
The 7:00 Salon is limited t twelve women each month..
Some will come once.
Others may return.
Faces may become familiar.
Conversations may continue.
And over time, what began as an evening out may begin to feel like somewhere you know.
The First Season
Each Salon evenings will be scheduled individually.
Each salon will present a champagne paired with carefully chosen food.
Women who register interest will receive priority notice in advance when dates and locations are announced.
Twelve seats will be offered for each Salon exclusively.
Champagne is the invitation.
The 7:00 Salon always begins with a Champagne cocktail on arrival.
Beautiful bottles.
Champagne poured slowly, never rushed.
Stories of patience, courage, expression and possibility.
But Champagne is not used as a symbol of status.
It is what opens the evening.
It softens the room.
It gives us a reason to pause.
And it makes an ordinary evening feel like something worth remembering.
